Smoked Garlic Smash Burgers
It turns out smash burgers are incredibly easy to make at home, especially if a cast iron skillet is used. In our version, we keep the ingredients very simple as their flavors speak for themselves.
Grass-fed ground lamb, smoked garlic, and one of our signature salt blends is all that’s needed to make burgers that easily rival or exceed what can be found at popular burger joints. Pair these burger patties with the amazing Garlic Za’atar Brioche Buns from Everything & The Bagel Company that are included in our latest meal kit for happy bellies all around.

INGREDIENTS:
1 pound grass-fed ground lamb
3-4 cloves smoked garlic, peeled and minced
1 teaspoon Smoked Garlic Artisanal Salt
1-2 tablespoons avocado oil or butter, divided
4 Garlic Za’atar Brioche buns, cut in half and butter toasted if you’re feeling fancy

INSTRUCTIONS:
Preheat a cast iron skillet on the stovetop over medium-high heat and add about half a tablespoon avocado oil. Swirl the oil around the pan to evenly distribute.
Meanwhile, add thawed ground lamb to a mixing bowl and add the minced smoked garlic and the Smoked Garlic Artisanal Salt. Mix evenly and divide the meat into 4 equal sized quarter-pound balls.
Once the oil in the cast iron pan is hot, add a ball of meat and immediately press down to about 1/2” thickness, either with a burger press or the back of a small saucepan.
Adjust the heat down slightly if you need to (everyone’s stovetop is different) and cook for 4-5 minutes until the juices release onto the top of the burger patty. Use a splatter screen over the pan if you have one to minimize the mess (the mess it worth it though either way).
Once the patty is browned and just starting to char, carefully flip it over and cook for another 2-4 minutes, depending on how well done you want your burgers to be.
Remove the cooked patty from the skillet and repeat the process for the next 3 patties, adding half a tablespoon to the pan before each portion of meat is added.
Once all 4 patties are cooked, assemble the smash burgers with you favorite toppings on the brioche buns. Serve with a farm fresh side salad if you like.
