Sautéed Garlicky Greens

Sautéed greens are a staple side dish, especially when we crave something warm and comforting but also light and nourishing. They’re a fast and simple way to change it up when you don’t feel like salad. We prefer our greens with a big helping of garlic (not really a surprise probably). Slicing the garlic rather than mincing means a heartier texture that we really enjoy.

Serve these greens alongside burgers, lamb chops, or roasted chicken or include them as a component in a meat-free power bowl.

  1. Heat oil in a large skillet on medium-low heat. When warm, add garlic slices and a pinch of Romesco Garlic Salt. Cook, stirring occasionally, until slightly golden and softened (about 3 minutes).
  2. Add greens to skillet in batches if necessary. The volume will shrink considerably. Stir to incorporate the greens with the garlic. Cook for about 5 minutes or until softened to your liking.
  3. Season with more salt if you prefer, black pepper, and Garlic Za’atar or Italian Seasoning. Serve warm with lemon wedges to be squeezed overtop.

Notes

  • This recipe is adaptable to practically any garlic you have on hand — use fresh, cured or smoked garlic and slice the cloves as instructed in the recipe.
  • If it’s springtime and green garlic is in season, use up to one bunch of that instead. Trim the roots and more fiberous dark green tops away and then slice the remaining white and light green parts into discs.
  • Is fresh garlic not in season in any form? No problem! Simply add the greens to your warm, oiled skillet and sprinkle over 1-2 teaspoons of garlic powder, along with Romesco Garlic Salt.
  • These garlicky greens are delicious as is, but we also like to add hot sauce sometimes. Other yummy additions to consider are feta or parmesan cheese, pumpkin seeds, dried cranberries, or toasted almonds.
