Farmhouse Lamb Tacos
What better way to celebrate the launch of our new taco seasoning than to share our family’s favorite taco recipe? This easy meal is a weeknight staple — one we usually have about once a week.
To us, there are a few things that can help a meal become a regular in our home. First, it needs to be nourishing and delicious. Check ✔️ It also needs to be relatively simple to make. What makes this recipe adaptable? Almost everything! While we love lamb here, the protein can be substituted. What veggies you add to the meat has countless variations — change it up according to what your family prefers, the season (shredded zucchini is great in the summer, for example), or what you happen to have on hand.
Farmhouse Lamb Tacos
Ingredients
- 1 tablespoon lard, ghee, or cooking fat of choice
- 1 cup assorted chopped vegetables (see notes for ideas)
- 4 cloves of garlic, minced
- 1 to 2 tablespoons Farmhouse Taco Seasoning
- 1 pound ground lamb or beef
- taco shells or tortillas, for serving
- toppings, including raw cheddar, salsa or pico de gallo, greens, avocado, etc
Instructions
- Heat lard in a large skillet, preferably cast iron, over medium heat.
- Once the cooking fat is melted and warm, add chopped veggies. Sauté for about 5 minutes or until softened slightly.
- Add garlic and taco seasoning to the softened veggies and cook for 1 or 2 minutes, until fragrant.
- Add one pound of ground lamb into the skillet and cook, stirring often, until broken up and cooked, about 10 minutes. If using cast iron, adjust the heat down a little to prevent sticking.
- While the meat cooks, prepare you shells or tortillas. We ordinarily warm them in the oven at 325F.
- Prepare your toppings and serve.
Notes
Our favorite veggies to add for a boost of flavor and nutrition are cabbage, carrots, turnips, kale, beet tops, spinach, sweet potato, leeks, onion, peppers, and cauliflower. Use whatever combo you like, depending on your family's preferences and what you have on hand.
